Cooking With Phil: See ya later, alligator

TRAVERSE CITY -- "This is Larry," says Phil Murray, Owner of Phil's on Front in Traverse City as he holds up an alligator head. "He's a pretty nice guy, but he's obviously stuffed."
Phil is helping you create some of his favorite dishes in your own kitchen every week on UpNorthLive Tonight on ABC 29&8.
This week Phil is sharing his Alligator Bites recipe:
"I'm trying to keep the balance of humans being eaten by alligators, and alligators being eaten by humans," says Phil.
Ingredients:
1 lb. Alligator meat, diced in 1/2 inch chunks
1 Sweet onion cut into chunks
3 Shallots, diced
1 oz. Chopped sage
1 Tbs. Chopped garlic
2 Cups sherry
Mayonnaise
Dijon mustard
Creole spice
Panko bread crumbs
Cooking Directions:
Saute all ingredients for one minute. Add sherry and simmer for 90 minutes, or until gator meat is tender. Cool, and chop so it becomes semi-chunky. Mix together. Mold mixture into small patties, then pan fry in oil of your choice.
"I make everything really tasty and yummy," says Phil.
Phil's sauce recommendations: Horseradish, sour cream, whole grain mustard, whole cream equal parts, jalapeno to taste.
