TRAVERSE CITY -- Jeff Neidorfler and his wife Misha left two high-powered careers in Milwaukee,Wisconsin for what they call a simpler life.

They packed up their kids, moved to Traverse City and opened a pretty unique type of bakery and coffee shop, "We realized that no-one in the world is really doing what we're doing which is a complete line of two-bite baked good," said Jeff Neidorfler.

Jeff was an architect and Misha was an interior designer, had always dreamed of opening their own bakery and coffee shop, but they say there were already a lot of people doing that.

So, they wanted to do something different.

The question was what? "What if we went small? What if we did really good two-bite baked goods? And within an hour, we had the name, the concept. We had a lot of our flavor ideas figured out," explains Jeff.

The result was Morsels Bite-Sized Bakery and Gourmet Coffee at the corner of Front and Cass in Traverse City.

Jeff does most of the baking and Misha works as the barrista.

They both come from professions where creativity is the name of the game, so the transition to this very different way of making a living isn't as difficult as it may seem, "We've actually found we are able to tap into more of our creativity than we were," said Jeff.

In the nearly two years since they've been open, they've developed a pretty strong base of regular customers, "I pride myself on knowing what everyone's drink is and so pretty much everyone that walks in the door I say 'the usual?' and I always ask because some people like to switch it up on me occasionally," said Misha.

Jeff and Misha also like to change things up.

They're constantly creating new flavors for the bakery side of the business, "We have over 60 flavors that we've developed to date that we continue to do more flavors every day," explained Jeff.

Jeff and Misha hope to one day expand and open more locations.

They say they've even been approached by people interested in franchising.
