Baby carrots make Phil a macho gazpacho

This week Phil has a vegetable extravaganza in his kitchen!

TRAVERSE CITY -- "I got these at Oryanna," said chef Phil Murray, owner of Phil's on Front in Traverse City. "And on the bag it says, 'Bunny Love Carrots,' with a little picture of a bunny eating a carrot. If a bunny eats it, I'm in."

Phil is helping you create some of his favorite dishes in your own kitchen every week on UpNorthLive Tonight on ABC 29&8 at 6:30 p.m.

This week Phil has a vegetable extravaganza in his kitchen!

Here's Phil's Zesty Gazpacho recipe:

Ingredients:

2 red peppers

2 green peppers

4 carrots

3 cucumbers

8 tomatoes (heirloom)

2 oz. cilantro

1 scallion

Cooking Directions:

Chop all vegetables into ½ inch pieces, dice. Season to taste with olive oil, vinegar, salt and pepper. Phil said to be sure to savor the natural juices the vegetables give.

Phil also said to tell everyone about your fresh, Michigan-grown veggies.

"Look at that nice cucumber," said Phil. "That thing is from Michigan! Made in Michigan! Beautiful little vegetable."

But be quiet about that fresh cilantro!

"Whatever you do, don't tell Randy Chamberlain at Blu Restaurant I use cilantro," said Phil. "Just don't tell him that one, please!"
