"We're going to show you the healthy part of Phil," says Phil Murray.

TRAVERSE CITY -- In between juggling avocados and slicing tough roma tomatoes that can "beat the crash test for a 1975 Granada," Phil Murray, Owner of Phil's on Front restaurant in Traverse City, takes the time to show us how to get healthy for the new year.

"We're going to show you the healthy part of Phil," says Phil. "It's something you can eat and say, 'Oh, Boy! I'm eating healthy now!'"

Phil is helping you create some of his favorite dishes in your own kitchen every week on UpNorthLive Tonight on ABC 29&8.

This week Phil is sharing his "Roasted Roma Tomatoes with Avocado Salad" recipe:

Ingredients:

2 large tomatos, 3 avocados

Marcona almonds

Fresh, chopped basil

Pine Nuts

Balsamic vinegar

Extra virgin olive oil

Cooking Directions:

Cut tomato in half lengthwise. Roast in a 200 degree oven for 45-60 minutes, or until skin becomes loose. Let cool and peel off skin. Place on plate with an avocado half. Drizzle Fustini's Balsamic Vinegar and Virgin Olive Oil on tomatoes and avocado. Garnish with fresh, chopped basil and pine nuts... Or sweet marcona almonds.
