Phil springs into Summer with wine, cheese and watermelon

"It's a snack salad made in heaven," said chef Phil Murray

TRAVERSE CITY -- "It's a snack salad made in heaven," said chef Phil Murray, owner of Phil's on Front in Traverse City. "You've got the Summer salad of a lifetime." 

Phil is helping you create some of his favorite dishes in your own kitchen every week on UpNorthLive Tonight on ABC 29&8 at 6:30 p.m.

This week Phil is jumping into Summer with his juicy Watermelon Salad recipe:

Ingredients:

2 oz Arugula

4 Watermelon slices

1 oz Goat cheese

Dash of sea salt

Balsamic glaze to your likening

Chardonnay

Cooking Directions:

"Before I start my watermelon salad, the day before, I'll punch a hole in the watermelon and open a bottle of Bry's Estate Naked Chardonnay," said Phil. "Let it seep into the watermelon overnight."

Put arugula on plate and place one watermelon slice on top. Squeeze a dab of goat cheese on top of slice and place another slice on top. Sprinkle some sea salt, add more goat cheese and another slice. Add a little more salt and drizzle balsamic glaze over the top.

"Use some Italian balsamic glaze," said Phil. "You can make it at home with balsamic vinegar."

Voila! That's it. You've got yourself an easy, Summer salad.

"Oh boy does it look good," said Phil. "Yummy, yummy yummy, I've got watermelon in my tummy."
