Directions
Quarter Goose
Trim excess fat
Render fat
Season goose cracked peper and sea salt
Bruise in the oven at 250 to 275 degrees in a covered pot
Add Rendered fat
Cook 4-6hrs or until tender
When cooled add and debone goose and make goose stock (gravy)
