New micro-brewery in Traverse City
TRAVERSE CITY -- “It started as a hobby and just quickly progressed into an obsession,” said Dustin Jones, owner of Brewery Ferment. “It didn’t take long for me to say, ‘Why not do it?’”
Brewery Ferment is the new micro-brewery in the Old Town District of Traverse City.
Jones said he wanted to differentiate his business from other breweries. He described it as a more contemporary atmosphere where the lights are not too dim and the music isn’t too loud. He said he hopes people will be able to come in, work from their computer and have a pint of beer.
“It’s really just this kind of, again, community feel,” Jones said.
Right now Brewery ferment offers 6 beers that are available year round. They are known as the “Flagships” and include: Worker’s Daily, Logger Lager, MItten Wit, 45th Parallale, Bookstore Bitter and Old Town Brown.
Jones said Worker’s Daily and Logger Lager rotate availability.
“We also try to have a few fun things,” Jones said. “They change quite rapidly because we are so small, but we really try to hone in on these five flagships that we have to make sure there’s a good range, so there’s a little something for everybody.”
It’s not just the names that are locally inspired.
“Since we are so small, we’re able to use large amounts of local hops in the beers, whereas a lot of larger breweries can say, ‘Well we use them’, but it’s only going to be a very small percentage of the hops that they actually use.”
Their location in the Old Town District is something Jones is very excited about.
“We are trying to become, more or less, the people’s brewery,” Jones said. “We’re more than willing to adjust things in order to cater to what the people want.”
They have only been open for a few weeks, but so far they have had a good response.
“It just makes me happy to see the other people enjoy these things,” Jones said.
