Blackened Salmon with Peppered Succotash

Salmon Fillet seasoned and Sautéed in a Hot Skillet served on a bed of
Lima Beans, Red and Green Peppers, Onions and Corn 

Serves 4

4 each 6-7 ounce portions of salmon fillet
2 oz blackened fish seasoning
2 oz salad oil
1 cup cooked baby lima beans
1 cup corn niblets drained
2 oz chopped onion
2 oz chopped green pepper
2 oz chopped red pepper
S&P to taste 

Place 1 oz of oil in hot skillet. (Let skillet get hot just about to smoking)
Dredge salmon fillets in Blackened fish seasoning
Place in hot pan and sear on each side about 2 min each
Remove from pan and place in 350 oven for 8 minutes.
Take skillet and add remaining oil, add bell peppers and onions saute for 2 minutes. Season with salt and pepper
Add lima beans and corn toss in the pan.
Taste for seasoning, and season with blackened fish seasoning and S&P
Place equal portions of succotash on dinner plates and top with salmon fillet.
